From yuck to yum
"Eww! I do not like cauliflower," said a fifth-grade boy. He had arrived at the Inova Healthy Plate Club (IHPC), a program that teaches kids about cooking and nutrition, to learn he’d be making cauliflower nuggets.
But, as this student and his classmates beat the eggs, measured seasonings, and lightly breaded the cauliflower, his attitude started to change. By the end of the hour, he was happily eating a plate of cauliflower nuggets. "I guess I do like cauliflower!"
Through creative taste tests, hands-on cooking, and nutrition education, IHPC works to increase vegetable consumption among children who attend Title 1 schools or who are eligible for free and reduced lunch.
